Ingredients–1st part

2 medium tomatoes

1/2 avocado

1/4 cup sundried tomato, soaked until soft

1 clove garlic

1 handful of cilantro

1 Tblsp chili powder (or more to taste)

1 tsp ground cumin

1/2 tsp salt

Puree in a food processor. This is the ’soup’ so taste it for flavor. Put in a bowl big enough to add the following to:

1/2 red pepper, diced

1/2 green pepper, diced

1/4 cup green onion, ‘diced’

1/2 avocado, diced large

1/2 tomato, diced

1 handfrul of cilantro, ripped apart

1 Tblsp olive oil

1 tsp lime juice

1 dash of salt to taste

Place all diced veggies in the puree (soup) and stir it well to mix the olive oil and lime juice in. Enjoy!!
