“Raw” Ranch Dressing

Ranch Dressing/Dip

 

Ingredients:

1-1/2 C nuts (cashews or macs or combo–soak them for a creamier texture-20 min to 2 hours)

¾ C Water

3 T lemon juice (approx ½ lemon)

1/3 cup cider vinegar

1/3 C Olive oil

3 T Agave

2 Cloves Garlic

1 t Garlic powder

3 t onion powder

1 t dill

1T salt

½ t basil

 

And add after blending:

¼ c parsley finely minced

½ t dill minced

 

Blend in blender except last 2 ingredients. Store in air tight container in fridge. Enjoy!!

Onion bread

Onion bread

 

2 ½ lbs sweet onions peeled

1 cup ground sunflower seeds

1 cup ground flax seeds

½ cup olive oil

3 oz Nama shoyu (soy sauce or salt will do)

 

Use a food processor or dice onions. Put in mixing bowl and add the rest of the ingredients. The flax will absorb the liquid. Smooth onto teflex sheets about 1/4 “ thick and place in dehydrator for 8 hours or so until you can flip them off onto the regular mesh screens. Dehydrate until dry. (Note: if not completely dry, the bread can rehydrate and get a little mushy. If that happens, just pop them back in the dehydrator again.

Raw Fruit ‘cream’ pie

           Fruit ‘cream’ pie

 

1 cup strawberries

1/2 cup coconut oil

1/2 cup cashews

1 tsp vanilla

1/4 cup agave

blend together in vita mix until creamy pour into crust refridgerate around 3 hrs

2 cups nuts pecans are good( but you may mix and match)

1/2 cup dates (soaked)

 

this pie can be peach, mango or combo of both. (Lenore used frozen peaches for the Taste)

all nuts and dates should always be soaked

these amts are for 9″ pie pans

Raw Apple Pie

            Apple pie

 

Crust  may be made out of any nuts you like or a combo of them. I like walnuts pecans or both for the apple pie mixed with dates till you can squeeze the crust between your fingers and it will hold together (maybe 5-8 dates)

Slice apples in processor aprox 6-8 depending on the size

2 tsp’s cinnamon

2 tblspns agave

1/2 - 1 cup raisins

1 tablespoon psyllium (thickener– whole foods) 

mix all together- put into crust

let sit for about 1/2 hr again    SMILE

 

Raw Blueberry pie

Blueberry Pie

 

             Crust

2 cups almonds ( soaked overnight)

1/2 cup dates  pitted (soaked few hrs or overnight)

 

grind almonds first then add dates then press into pie pan

 

            Filling

 

5 cups blueberries

2 bananas

1 1/2 tblspns agave or more if you like a little sweeter

 

save one cup blueberries process the rest add to pie crust, add the cup of whole blueberries  refrigerate

3 hrs  &   SMILE

Sunflower seed pate “from the sea”

Sunflower seed pate

 

2 cups soaked sunflower seeds (overnight is fine)

1 cup macadamia, cashews or pine nuts  (you can mix or just use one)

1/2 bunch of celery chopped

1/2 bunch scallions

4 tblsps dulse flakes (whole food carries)

2 cloves garlic

1/2 lemon juiced

1/2 cup mustard

 

soak nuts chop everything together in food processor ( I do celery by hand I like the crunch) if to thick you may add coconut water or just plain water

Cranberry sauce

Ingredients:

  •  7 oz cranberries
  • 3/4 cup sugar
  • 3/4 cup orange juice

In a medium sized saucepan over medium over medium heat, dissolve the sugar in the OJ. Stir in the cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.

Raw Chili

Veggie Chili

  •  A chunky chili with veggies and no beans. Very good with a nice crunch from the peppers. You’ll be surprised how good it is! (I found this made enough for 1 person-you may want to double it at least or you will after you make it the first time)

Ingredients–1st part

  • 2 medium tomatoes
  • 1/2 avocado
  • 1/4 cup sundried tomato, soaked until soft
  • 1 clove garlic
  • 1 handful of cilantro
  • 1 Tblsp chili powder (or more to taste)
  • 1 tsp ground cumin
  • 1/2 tsp salt

Puree in a food processor. This is the ’soup’ so taste it for flavor. Put in a bowl big enough to add the following to:

  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 1/4 cup green onion, ‘diced’
  • 1/2 avocado, diced large
  • 1/2 tomato, diced
  • 1 handfrul of cilantro, ripped apart
  • 1 Tblsp olive oil
  • 1 tsp lime juice
  • 1 dash of salt to taste

Place all diced veggies in the puree (soup) and stir it well to mix the olive oil and lime juice in. Enjoy!!
